As the days grow shorter and the nights draw in, Can Bordoy Grand House & Garden is preparing for a truly special evening. On 10 November, Botànic will host a one-off St Martin’s Day dinner for which these two talented chefs will join forces to create an autumn-themed four-course menu with a Swedish twist.
A Nordic tradition reinterpreted in Mallorca!
The St Martin’s Dinner, also known as the ‘Goose of St Martin’, is one of southern Sweden’s most beloved festivities. According to legend, St Martin tried to hide to avoid being appointed bishop, but the cackling of the geese betrayed him. Since then, Swedish families have roasted this bird in his honour, marking the arrival of winter with a feast full of warmth and aroma.
Botànic’s chef, Andrés Benítez, and Jonas Petersson, the chef and founder of the renowned Sa Fumata Palma restaurant, have drawn inspiration from this tradition to pay homage to Nordic heritage, blending the flavours of the Scandinavian forest with the freshness of the Mediterranean garden.
Two chefs, two visions, one table:
Originally from Sweden, Jonas Petersson gained experience in Stockholm, London and New York before becoming a master of game cuisine. His style combines fire and smoke with a deep respect for nature, capturing the essence of northern Sweden.
Meanwhile, Andrés Benítez has developed a vibrant and elegant plant-forward cuisine at Botànic, transforming local produce into a sensory experience. Having worked in Michelin-starred establishments such as Nerua, Sergi Arola Gastro and Bou, he has developed a technical and artistic approach that has made Botànic one of the leading destinations for creative cuisine in Palma.
Together, they will present an unforgettable autumn dinner in Mallorca — a one-night-only event.

The menu, created exclusively for this occasion, reflects the fusion of their two culinary styles. Guests will enjoy chanterelle cream, crispy black pudding and herb crystal bread to start, followed by roasted goose breast and duck confit with foie gras, served with Brussels sprouts, red cabbage and crispy potatoes. For dessert, there will be apple crumble with vanilla sauce.
